Ingredients
- 1 lb ground turkey breast (99% lean)
- 1/2 medium onion
- 1/4 cup old-fashioned rolled oats
- 1 large egg
- 1 garlic clove
- 1 romaine heart
- 3 medium tomatoes
- 1 tbsp plus 2 tsp olive oil
- 4 slices 100% whole-wheat bread
- 4 tsp mustard
Directions
- Mix the turkey with the grated onion, chopped garlic, oats, egg, and salt.
- Shape into 4 patties. Freeze any raw patties you won’t eat within 2 days, separated with parchment paper; thaw them in the refrigerator the night before you cook them.
- Cook the ones you’ll eat in a nonstick skillet or grill pan with a little of the oil, about 5 minutes per side over medium heat, until cooked through, with no pink inside (165°F).
- Serve each burger with lettuce and tomato dressed with the rest of the oil and the mustard, and a slice of toast.
